Ingredients

  • 2 zucchini thinly sliced
  • 1 1/2 cup arugula
  • 1/2 teaspoon salt
  • 1 dill sprig
  • 1/4 cup extra virgin olive oil
  • 1/2 cup almonds
  • 1/2 cup parmesan shavings

Instructions

  • Arrange 1/2 cup arugula on serving platter. Top with 1/3 zucchini.
  • Repeat layers twice.
  • Sprinkle with dill, olive oil, almonds and parmesan.
  • Serve cold and ENJOY!
