Tuna Pasta with Tomatoes

This easy Tuna Pasta With Tomatoes is perfect for a quick meal! With fresh tomatoes and parsley, this pasta can easily be modified!

Ingredients

  • 8 oz. Tagliatelle Pasta or an long flat noodle
  • 6-7 garlic cloves
  • 4 oz tuna packed in olive oil
  • 3-4 tomatoes
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 3 tablespoons extra-virgin olive oil
  • 1/4 cup fresh parsley finely chopped

Instructions

  • Start by putting water to boil in a pot, when it boils, add the pasta and the peeled garlic, cook pasta according to package or until al dente.
  • Meanwhile cut the tomatoes, and add it to a large bowl. Season with salt, pepper, and olive oil.
  • Add the tuna and half of the portion of the finely cut parsley. Stir well, breaking up the tuna into small pieces.
  • Strain the pasta and garlic. Discard garlic.
  • Finish by adding pasta to bowl. Stir well.
  • Top with remaining parsley.
  • Serve warm or cold. ENJOY!

Notes

**The cooking time of the pasta will vary depending on the type, or brand used. I recommend cooking it "al dente" as it is typically cooked in Italy, resulting in a sturdy pasta.
**You can serve it immediately to eat it hot, or wait for it to cool down and serve it as a pasta salad.
**This pasta perfectly pairs with spicy flavors. Add 2 teaspoon red pepper flakes to kick it up a notch!
