Using a large pot, saute on medium heat onion and olive oil till translucent, about 2-3 minutes. Add carrots, salt, basil, and oregano. Saute for 2-3 minutes
1 cup diced yellow onion, 2 tablespoons extra-virgin olive oil, 1 teaspoon salt, 2-3 carrots, 1 teaspoon dried basil, 1 teaspoon dried oregano
Add sausage and brown, breaking it into pieces as you go. About 3-5 minutes.
8 oz bratwurst
Add potatoes. Saute for 2-3 minutes.
1 pound little potatoes
Add in water, bouillon and tomato sauce. Then stir.
5 cups hot water, ½ teaspoon better than bouillon, 8 ounces unsalted tomato sauce
Bring to a boil about 3-4 minutes.
Reduce heat and let it simmer for 15 minutes or until potatoes are softened.
Top with parmesan shavings and parsley.
