Pasta with Sausage and Radicchio

Easy Pasta with Sausage and Radicchio! Made with either penne or cavatappi, filled with vegetables and a cream sauce!

Ingredients

  • 1 pound penne or cavitappi
  • 4 ounces ground pork sausage
  • 2 tablespoons extra-virgin olive oil
  • 1 small onion sliced
  • 1 teaspoon salt
  • 4 ounces radicchio red cabbage, sliced
  • 1 cup peas cooked
  • 1 ½ cups heavy cream
  • Optional toppings: fresh parsley and Parmesan cheese

Instructions

  • Cook pasta according to the package. Reserve ¼ cup pasta water.
    1 pound penne or cavitappi
  • In the meantime, in a large skillet cook on medium heat the ground sausage. Remove from the pan and set aside.
    4 ounces ground pork sausage
  • Add olive oil and onions. Sauté over medium heat until translucent. About 2-3 minutes. 
    2 tablespoons extra-virgin olive oil, 1 small onion
  • Add radicchio, sprinkle with salt. Sauté for 2-3 minutes till softened. 
    4 ounces radicchio, 1 teaspoon salt
  • Stir in sausage and peas in the saute pan.
    1 cup peas
  • Pour in heavy cream and stir. Keep on low till pasta is ready.
    1 ½ cups heavy cream
  • When pasta is done, drain and add to skillet. Stir well. 
  • Serve, sprinkle with parsley and cheese. ENJOY!
    Optional toppings: fresh parsley and Parmesan cheese

Notes

The cream sauce will thicken as the pasta and sauce cool. Reserve some of the pasta water if it thickens too much.
