Ingredients

  • 4 medium carrots shredded
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 tablespoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried parsley optional ingredient

Instructions

  • Add carrots and lemon juice bowl. Mix well until carrots are fully coated.
  • Add olive oil, vinegar and salt. Mix well until carrots are fully coated.
  • (optional) top with parsley.
  • Serve and ENJOY!.
