In large ziplock bag add 1 cup Italian dressing and chicken. Marinate for 6 hours or overnight.
Preheat medium skillet to medium heat.
Add olive oil and onion to skillet and cook for 3 minutes.
Add peppers and cook for 3 minutes.
Remove chicken from bag, discarding the dressing. Add chicken to skillet. Cook for 8-10 minutes or until internal temperature reaches 165 degrees F.
Pour 1/4 cup dressing over chicken and stir allowing to cook for 2 minutes.
Serve and ENJOY!

*Perfect for serving over rice or pasta!* You do not have to marinate this for 6 hours, although you should do it for at least an hour. The longer it sits the more the flavors marry into the chicken.
