Ingredients

  • 1 1/2 half pounds raw shrimp cleaned and washed
  • medium red bell pepper diced
  • 1 medium yellow bell pepper diced
  • 1/2 medium zucchini diced
  • large onion quartered
  • 5 garlic cloves chopped
  • 1 teaspoon fresh thyme
  • 1 teaspoon cayenne pepper
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • lemon rings for taste

Instructions

  • In a large bowl, add shrimp peppers, zucchini, onion, garlic, thyme, cayenne pepper, salt, pepper and oil. Combine well and let marinate in the refrigerator for 20 minutes.
  • Heat a large non-stick skillet and fry the shrimp mix for about 10 minutes by stirring from time to time.
  • Serve hot with lemon and rice. ENJOY!
