Creamy Pumpkin Pasta

- 8 ounces mini penne
- 1/2 red onion chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh sage
- 2 teaspoons salt
- 1/2 cup pumkin
- 1 cup heavy cream
- 4 slices Cabot Vermont Sharp White Cheddar Cheese
In a large pot of boiling salted water cook penne according to package, about 12 minutes. Reserve 1 cup water then drain, set aside.
In a large pan add onion and olive oil. Cook over medium heat for 5 minutes.
Add in sage, salt and pumpkin. Stir.
Slowly stir in heavy cream, continue to cook for 2 minutes.
Slowly stir in pasta water.
Add cheese and pasta. Stir.
Serve immediately and ENJOY!
