Creamy Pumpkin Pasta

This Creamy Pumpkin Pasta screams fall! With canned pumpkin, sage and cream this 30 minute meal is perfect for a weeknight dinner!

Ingredients

  • 8 ounces mini penne
  • 1/2 red onion chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh sage
  • 2 teaspoons salt
  • 1/2 cup pumkin
  • 1 cup heavy cream
  • 4 slices Cabot Vermont Sharp White Cheddar Cheese

Instructions

  • In a large pot of boiling salted water cook penne according to package, about 12 minutes. Reserve 1 cup water then drain, set aside.
  • In a large pan add onion and olive oil. Cook over medium heat for 5 minutes.
  • Add in sage, salt and pumpkin. Stir.
  • Slowly stir in heavy cream, continue to cook for 2 minutes.
  • Slowly stir in pasta water.
  • Add cheese and pasta. Stir.
  • Serve immediately and ENJOY!
