Cheesy Spinach Orzo

A 20 minute dinner option with just a few ingredients! This Cheesy Spinach Orzo is perfect for using fresh spinach!

Ingredients

  • 1 1/2 cup orzo pasta
  • 2 tablespoons olive oil
  • 1/2 cup onion diced
  • 2 garlic cloves
  • 2 teaspoons salt
  • 4 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 1/2 cup freshly grated parmesan cheese

Instructions

  • Cook 1 1/2 cups orzo pasta according to package. (about 10 minutes)
  • In the meantime, add olive oil and onions to medium pan. Cook for 3 minutes or until onions are softened.
  • Add garlic and salt. Continue to cook on medium heat for 3 minutes.
  • Add spinach and continue to cook on medium-low for 5 minutes.
  • When pasta is done, reserve 1/4 cup water, drain the rest and add to pan.
  • Stir in 2 tablespoons olive oil.
  • Stir in cheese.
  • Serve warm and ENJOY!

Notes

To keep pasta from drying out reserve 1/4 cup of pasta water! Add this only if needed, before the cheese.
