Ingredients

orzo pasta

olive oil
1/2
cup
onion
diced

garlic cloves

teaspoons
salt

fresh spinach
2
tablespoons
olive oil
1 1/2
cup
freshly grated parmesan cheese
Instructions
Cook 1 1/2 cups orzo pasta according to package. (about 10 minutes)
In the meantime, add olive oil and onions to medium pan. Cook for 3 minutes or until onions are softened.
Add garlic and salt. Continue to cook on medium heat for 3 minutes.
Add spinach and continue to cook on medium-low for 5 minutes.
When pasta is done, reserve 1/4 cup water, drain the rest and add to pan.
Stir in 2 tablespoons olive oil.
Stir in cheese.
Serve warm and ENJOY!

To keep pasta from drying out reserve 1/4 cup of pasta water! Add this only if needed, before the cheese.
