Carrot Cake Mug Cake with Cream Cheese Frosting

Ingredients

  • 2 tablespoons butter
  • 1 egg yolk
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • 1/4 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon shredded carrots
  • 1 tablespoon walnuts chopped
  • 1 tablespoon cream cheese softened
  • 1 teaspoon powdered sugar
  • 1 teaspoon milk

Instructions

  • In large mug add butter and melt In microwave for 30 seconds.

  • Add the egg yolk, milk, and vanilla. Whisk together.

  • Add in flour, sugar, baking powder and cinnamon. Whisk together till smooth.
    1/4 cup all-purpose flour, 2 tablespoons sugar, 1/2 teaspoon baking powder, 1/2 teaspoon ground cinnamon
  • Stir in carrot and walnuts.
    1 tablespoon shredded carrots, 1 tablespoon walnuts
  • Microwave for 1 minute or until cake pulls away from sides of mug.
  • Mix cream cheese, powdered sugar and milk together. Pour over cake.
    1 tablespoon cream cheese, 1 teaspoon powdered sugar, 1 teaspoon milk
  • Serve warm and ENJOY!
