Avocado Pasta

This Creamy Avocado Pasta is silky, fresh, and easy to prep! Use a ripe avocado, fresh tomatoes top it over your favorite pasta noodle!

Ingredients

  • 1 pound penne
  • 1/2 tablespoon sea salt
  • water
  • 1 avocado
  • 2 tablespoons extra-virgin olive oil
  • 1/2 lemon or 1 tablespoon of juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1 cup non fat plain Greek yogurt
  • 8 oz cherry tomatoes halved
  • 1/4 cup Parmesan cheese

Instructions

  • In large pot bring water and sea salt to a boil. Add penne and cook for 10-12 minutes or al dente. Reserve 1/2 cup pasta water. Drain and set aside.

  • In the meantime add avocado to bowl.

  • Next add olive oil, lemon juice, garlic powder, dried basil, and yogurt. Mash till creamy and smooth. (Can use a blender for this as well.)

  • When pasta is cooked, pour sauce over pasta, mix well. Add a touch of pasta water if sauce is too thick.
  • Top with tomatoes and cheese. Stir.
    8 oz cherry tomatoes, 1/4 cup Parmesan cheese
  • Serve immediately! ENJOY!

Notes

The sauce can also be made in a high power blender or food processor. It will come out extra creamy and there will be no chunks of avocado versus mixing by hand.
