Apple Cinnamon Oatmeal Muffins
These muffins are perfect for freezing! Pull them out when you ned to grab something and go! Full of fall flavors!

For the muffins:
- 2 large eggs room temperature
- 1 cup milk room temperature
- 1/2 cup non-fat plain Greek yogurt
- 1 teaspoon pure vanilla extract
- 1/2 cup brown sugar packed
- 1 stick unsalted butter melted
- 2 cups all-purpose flour
- 1/2 cup old fashioned oats
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 1/2 cups apples diced
FOR THE TOPPING:
- 4 tablespoons unsalted butter melted
- 3 tablespoons all-purpose flour
- 2 tablespoons brown sugar
- 1 tablespoon old fashioned oats
- 1/2 teaspoon ground cinnamon
For the drizzle:
- 1/2 cup powdered sugar
- 1 tablespoon milk
Preheat oven to 400 ℉. Line muffin pan with liners. Set aside.
In large bowl add eggs, milk, yogurt, vanilla, brown sugar, and butter. Whisk together until completely incorporated.
Add in flour, oats, baking soda and cinnamon. Stir in apples until combined.
Scoop into muffin liners. Set aside.
In small bowl add melted butter, flour, brown sugar, oats and cinnamon. Stir together.
Sprinkle the top of each muffin with a little of the topping mixture.
Bake for 12 minutes.
Serve warm and ENJOY!
