Apple Cinnamon Oatmeal Cookies

Ingredients

  • 1 stick butter softened (8 tablespoons)
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 egg room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup old fashioned oats also known as rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 apple skin on, cored and diced (about 1 cup of diced apple)

Instructions

  • Preheat oven to 375 ℉. Line baking sheet with parchment paper or silicon mat. Set aside.
  • In mixing bowl add butter and sugars. Whisk till incorporated.
  • Whisk in egg and vanilla.
  • Stir in flour, oats, baking soda and cinnamon till incorporated.
  • Stir in apples.
  • Using a cookie scoop, scoop onto baking sheet.
  • Bake for 9-11 minutes or just until golden brown.
  • Cool for 5 minutes.
  • Serve and ENJOY!

Notes

Make sure apple is diced into little pieces
STORE:
Store in refrigerator for up to 4 days. Store in freezer for up to 3 months. Defrost by letting them come to room temperature.
